Cut the ridge gourd, potatoes, bitter gourd, and drumstick into even pieces.
Temper panch phoron and ginger in a little oil, then add the vegetables with salt.
Cook until the vegetables begin to soften without browning.
Stir in mustard paste, poppy seed paste, and enough water to make a light stew.
Finish with milk and ghee, simmering gently so the sauce stays pale and mellow.
