Fry pork lightly.

(*If using sausage, after it is browned the grease should be discarded.)

Heat water to boiling in saucepan. Stir in cornmeal.

Add pork and seasoning and cook over low heat until very thick, stirring constantly.

Transfer to a 3 x 7-inch loaf pan and chill several hours or overnight.

Cover with wax paper to keep crust from forming.

Cut into thin slices and dip in flour and beaten egg and crumbs and fry in Crisco, about 2 tablespoons.

Serves 4 to 6.
