Hollandaise Sauce
Hollandaise Sauce is an easy dinner. Made with 1/4 pound butter, 2 egg yolks, 1 tablespoon lemon juice and salt and cayenne pepper to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Divide butter in thirds and put in bowl of ice.
Put enough water in bottom part of double boiler so that it is not touching top part of double boiler.
Bring water to a gentle boil.
In top of double boiler mix egg yolks and lemon juice.
Spear 1/3 of butter with a fork and swish it around in the lemon-egg mixture until melted.
Immediately spear another 1/3 of butter and repeat until all butter is melted.
Remove from stove, season and serve. Frozen butter can be use.
