Guilt-Free Cheese Sauce
Guilt-Free Cheese Sauce is an moderately easy dinner. Made with 2 tbsp. reduced-calorie margarine, 2 tbsp. all-purpose flour, 1 c. skim milk, 2 slices low-fat processed cheese, torn into small pieces and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Melt margarine in a heavy saucepan over low heat.
Add flour, stirring until smooth (mixture will be dry).
Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat, stirring constantly, with a wire whisk until thickened and bubbly. Add cheese, salt and pepper; stir until cheese melts.
Serve sauce over broccoli or other vegetables.
Yield: 1 cup (about 20 calories per tablespoon).
