Grilled Marinated Swordfish
Grilled Marinated Swordfish is an moderately easy dinner. Made with 6 swordfish steaks (about 1/2 lb. each and 1-inch thick), juice of 1 lemon, 1 c. vegetable oil, 4 cloves garlic, minced and 1 tbsp. dried oregano, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine oil, lemon juice, garlic, basil, oregano, salt and pepper; mix well.
Brush both sides of fish generously with mixture and refrigerate in marinade for 2 hours.
Turn steaks every half hour to marinate thoroughly.
Grill about 6 inches from coals for 5 minutes; turn and baste and cook 6 or 7 minutes more. Serve steaks brushed generously with melted butter and topped with fresh parsley.
