German Potatoes is an moderately easy dinner. Made with 3 medium size white potatoes, 3 strips bacon, 1/4 onion or 3 to 4 green onions, 1/2 c. white vinegar and 1/3 c. water, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Peel potatoes, slice or cut into 1/2-inch pieces and boil in salted water just until tender.

(Be careful not to overcook or the potatoes will become mush.)

Meanwhile cut bacon into small pieces. Cut onion into small pieces or green onions into thin slices.

Mix together vinegar, water, sugar, pepper and salt.

Fry bacon in skillet until crisp, then scoop bacon out of skillet into vinegar mixture, leaving drippings in skillet.

Saute onion in drippings. Add flour to onion in skillet and stir until smooth and thickened. Drain potatoes (when tender) and pour into skillet.

Add bacon/vinegar mixture and stir gently to mix evenly.
