Fresh Pasta Dough is an easy dinner. Made with 2 eggs, 2 tbsp. olive oil, 1/2 c. warm water, 1/4 tsp. salt and 2 1/4 to 3 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat eggs, oil, water and salt together until foamy.
Add enough flour to make a dough that is soft and elastic (much like soft bread dough, but not sticky).
Wrap in a towel; let rest about 10 minutes.
Divide dough into 3 to 4 smaller balls.
Flour and roll through pasta maker; cut as desired.
Or roll very thin with rolling pin on floured surface and cut with sharp knife. Cook in boiling water until al dente.
