Fresh Mushroom Soup
Fresh Mushroom Soup is an moderately easy dinner. Made with 1/4 lb. butter, 1/2 c. onion, chopped, 1 lb. fresh mushrooms, chopped, 3 tbsp. flour and 2 c. beef stock or bouillon, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Melt butter in a 2-quart saucepan and add onion.
Cook over low heat until the onions are clear but not browned.
Add the mushrooms and increase heat to moderate.
Cook, stirring occasionally, for 5 minutes.
Add the flour and cook, stirring constantly, for 2 minutes longer.
Add the beef stock and bring to a boil.
Turn down heat, add the herbs and simmer the soup for 10 minutes.
Add the cream and simmer for 10 minutes.
Finish the soup by adding the sherry and nutmeg.
Serves 6.
