Flounder Au Gratin

Melt margarine in a small saucepan on low heat.
Add onions and celery.
Saute until tender.
Stir in flour, salt and pepper.
Cook 1 minute, stirring constantly.
Gradually add milk.
Stir well. Cook over medium heat until thickened and bubbly, stirring constantly.
Add cheese.
Lower heat and cook until cheese melts. Set aside.
Drain fillets and arrange in a 6 x 10-inch baking dish that has been sprayed with vegetable cooking spray.
Pour cheese mixture over.
Cover.
Bake at 350Β° for 25 to 30 minutes until fish flakes easily.
Sprinkle with parsley and paprika.
Serve.
