Fat-Free Mashed Potatoes
Creamy mashed potatoes lightened with chicken broth and skim milk in place of butter and cream. Holiday flavor without the richness, perfect when calories are counted.
Put onion and garlic in cooking pan with potatoes.
Add enough water to cover potatoes.
Bring to a boil.
Simmer 30 to 35 minutes or until tender.
Remove the onion and garlic.
Drain the potatoes in a colander until thoroughly drained.
Pat dry, if necessary, to remove excess moisture.
Cut potatoes into chunks and mash by hand or use electric mixer.
Mash potatoes until free of lumps.
Add the desired amount of evaporated skim milk and whip until creamy. Season with pepper to taste.
