Fastnachts (Dutch Raised)
Fastnachts (Dutch Raised) is an moderately easy dinner. Made with 2 1/2 c. milk, 1/2 c. shortening, 2 tsp. salt, 5 1/3 c. flour and 1 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Scald milk; add shortening and salt.
Cool to lukewarm, then add 2 yeast cakes and stir.
Add flour gradually, beating well after each addition.
Cover with towel; put in warm place until full of bubbles.
Mix sugar and nutmeg.
Combine with beaten eggs. Stir into first mix (when ready) an additional 4 to 5 cups flour. Knead well.
Cover and let rise for about 1 hour in a warm moist place.
When light and high, with floured hands, pull and roll to 1-inch thick.
Cut with a round can and a thimble to make a doughnut shape.
Place on cookie sheets in warm place, covered, until all are cut.
Fry in hot fat at 365Β°.
Turn so both sides gently brown.
Sugar or frost, then enjoy.
