Danish Sesame Bran Bread
Danish Sesame Bran Bread is an impressive dinner. Made with 1 c. boiling water, 1 c. yellow cornmeal, 2 1/2 to 3 c. all-purpose or unbleached flour, 3 c. whole wheat flour and 1/2 c. shreds of whole bran cereal, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a small bowl, combine 1 cup boiling water and cornmeal. Lightly spoon flour into measuring cup; level off.
In a large bowl, combine 1 cup all-purpose flour, 1 cup whole wheat flour, cereal, sesame seed, salt and yeast; blend well.
In small saucepan, heat milk, oil, molasses and honey until very warm (120° to 130°); mixture will curdle slightly.
Add warm liquid, cornmeal mixture and yogurt to flour mixture.
Blend at low speed until moistened; beat 3 minutes at medium speed.
Stir in 2 cups whole wheat flour and about 1/2 cup all-purpose flour until dough pulls cleanly away from sides of bowl.
