Rinse and soak coarse rice grits, then steam them until partly tender and fluffy.
Mix the grits with chopped moringa, carrots, onion, garlic, scotch bonnet, curry powder, and salt.
Fold in cooked beef, crushed groundnuts, and a little oil so the grains stay separate.
Steam again until the vegetables soften and the rice grits are fully cooked.
Fluff the dambu before serving with extra groundnuts or chile oil.
