Crustless Vegetable Quiche(Serves 4)
Crustless Vegetable Quiche(Serves 4) is an moderately easy dinner. Made with 1/2 c. chopped celery, 2 tbsp. chopped onion, 1 (10 oz.) pkg. chopped broccoli, spinach or asparagus, thawed and drained, 6 eggs or egg substitute and 1 c. skim milk, this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Saute celery and onion in a nonstick pan, sprayed with "Pam."
Spray a 9-inch pie pan or quiche pan with Pam.
Arrange celery, onion and vegetables in pie pan.
In a medium bowl, beat the eggs, yogurt, milk and 3 ounces of the Swiss cheese and the salt and pepper.
Pour into pie plate.
Sprinkle remaining cheese on top.
Bake for 35 minutes until a knife, inserted in center, comes out clean.
