Cream Pie
Cream Pie is an moderately easy dinner. Made with 1 large pastry shell, 2/3 c. sugar, 3 1/2 tbsp. cornstarch (may substitute 5 tbsp. flour), 1/2 tsp. salt and 2 1/2 c. milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Combine sugar, cornstarch (or flour) and salt in top of double boiler.
Stir in cold milk; cook over boiling water (stirring constantly) until thickened.
Cover and cook 15 minutes longer. Stir a little of hot mixture into slightly beaten egg yolks.
Add remaining mixture into double boiler and cook for 2 minutes over hot (not boiling) water.
Stir constantly.
Cool and add vanilla. Pour into baked shell.
If desired, cover with meringue and bake at 325Β° for about 15 minutes or until lightly browned or just before serving top with whipped cream.
