Corn Oysters
Corn Oysters is an moderately easy dinner. Made with 2 c. corn kernels, 1/4 tsp. salt, 2 eggs, separated, 4 green onions, finely chopped and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mash the corn to break it up slightly, but do not purΓ©e it. Mix in the flour, salt, pepper and sugar.
Beat the egg yolks until thick and lemon-colored and combine with the corn. Beat the egg white until stiff peaks form and fold into the corn mixture. Heat a small amount of butter or oil in a frying pan and when hot, drop in the corn mixture by tablespoonfuls.
Cook until risen and brown on both sides, turning once.
Serve with chopped green onions and accompany with pepper relish.
