Coodies is an moderately easy dinner. Made with 2 lb. dry codfish (boneless if possible), 3 lb. white potatoes, cooked, mashed and cooled, 1 onion, finely chopped or grated, 1 tbsp. parsley and 1/2 stick butter or margarine, at room temperature, this recipe delivers authentic, satisfying flavors. Soak codfish overnight.

The next morning, drain off water. Place codfish in saucepan; cover with fresh water and bring to boiling.

Boil until tender (about 45 minutes to an hour).

Drain and cool.

If not boneless, debone codfish, flaking with a fork as you go along.

Add cooked, mashed potatoes, butter, onion, parsley, baking powder and eggs.

Salt and pepper, if desired. Combine and mash mixture with a large fork or beat with electric mixer.

Shape into cakes or balls.

Deep fry in hot oil until golden brown all around.
