Chicken Parmigiana
Chicken Parmigiana is an moderately easy dinner. Made with 3 whole chicken breasts, split, skinned and boned, 2 eggs, lightly beaten, 1 tsp. salt, 1/8 tsp. pepper and 3/4 c. fine dry bread crumbs, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Place chicken on cutting board and pound lightly with cleaver or heavy knife until about 1/4-inch thick.
Combine eggs, salt and pepper.
Dip chicken into egg mixture, then crumbs.
Heat oil until very hot in large frying pan.
Quickly brown chicken on both sides.
Remove to shallow baking dish.
Pour excess oil from frying pan.
Stir tomato sauce, basil and garlic powder into frying pan.
Heat to boiling.
Simmer 10 minutes.
Stir in butter or margarine.
Pour over chicken.
Sprinkle with Parmesan cheese. Cover.
Bake in 350Β° oven for 30 minutes.
Uncover.
Place Mozzarella cheese over chicken.
Bake until cheese is melted (approximately 10 minutes).
