Chicken and Wine Sauce
Chicken And Wine Sauce is an moderately easy dinner. Made with 4 whole chicken breasts, halved and boned, 1 beaten egg, plain bread crumbs, oil or margarine and 1/2 lb. fresh mushrooms, sliced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Dip chicken in egg, roll in bread crumbs, fry until brown on each side and arrange in shallow baking pan.
Saute mushrooms; add pepper, broth and wine.
Thicken with cornstarch (dissolve cornstarch in a little water before adding the mixture.)
Don't add salt.
Sprinkle 3/4 cup of Parmesan cheese over chicken; cover with 3/4 of the Mozzarella.
Pour sauce over chicken.
Sprinkle rest of 2 cheeses on top.
Bake at 350Β° for 40 minutes.
Serve with wild or white rice.
