Cauliflower Soup
Cauliflower Soup is an moderately easy dinner. Made with 1 medium cauliflower, 1/4 c. butter, 2 tbsp. grated onion, 2 tbsp. grated celery and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Trim cauliflower.
Cook in boiling water until tender.
Drain. Divide into florets; reserve about 1/4 of them.
Force remaining through a strainer or purΓ©e in blender.
Melt butter and cook onion and celery for 2 minutes.
Stir in flour.
Do not brown.
Gradually stir in bouillon.
Add cauliflower, hot milk, salt and pepper to taste.
Cook over medium heat, stirring constantly, until sauce coats spoon.
Beat egg yolk with heavy cream.
Remove soup from heat and gradually stir in egg yolk mixture.
Stir in sherry.
Add cauliflower florets.
Makes about 2 quarts.
