Cauliflower-Pea Casserole
Cauliflower-Pea Casserole is an moderately easy dinner. Made with 1 large cauliflower, 1/2 c. slivered almonds, 1/2 tsp. curry powder, 2 tbsp. flour and 1 1/2 tsp. onion salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Separate cauliflower into flowerets and cook in a small amount of unsalted boiling water for 6 to 8 minutes.
Drain well and place with peas in a greased 2-quart casserole.
Set aside.
Saute almonds and curry powder in 1 tablespoon butter.
Cook, stirring constantly, until almonds are browned.
Set aside.
Combine remaining 2 tablespoons butter and flour in heavy saucepan and stir until smooth.
Gradually stir in sour cream.
Cook over low heat, stirring constantly, until well heated.
Stir in salt and pepper.
Pour over cauliflower mixture.
Sprinkle almonds on top. Let stand for 30 minutes, then bake uncovered at 350Β° for 30 minutes.
