Broiled Orange Roughy(Low Cholesterol) is an easy dinner. Made with 2 lb. fresh orange roughy (1/2 lb. per person), 2 tbsp. orange juice, 2 tbsp. margarine, 2 tbsp. white wine and paprika, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
One fillet of roughy, when halved, adequately serves 2 people. Arrange individual servings on a rack over a broiler pan.
Mix orange juice, margarine and wine and heat until margarine is melted and ingredients are well mixed.
Baste top side 3 to 4 times, waiting a few minutes between bastings to allow basting to soak in.
Sprinkle with paprika, then turn fillets over and repeat.
Place fillets under broiler; broil 3 to 3 1/2 minutes on each side.
Garnish with orange or lime slices and serve immediately.
