Broccoli Soufflé
Broccoli Soufflé is an moderately easy dinner. Made with 1 pkg. frozen chopped broccoli, 2 tbsp. butter, 3 tbsp. flour, 1/2 tsp. salt and 1 c. milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat oven to 400°.
Butter and flour a 1-quart soufflé dish and the top third of a foil collar, then place collar around dish. Cook broccoli and drain.
Melt butter in a saucepan and stir in flour and salt.
Remove from heat.
Stir in milk gradually and return to heat.
Cook until thick, stirring constantly. Add lemon juice, nutmeg and broccoli to sauce.
Beat egg yolks and add to cooled sauce.
Beat egg whites to the foamy stage.
Add cream of tartar and continue beating until whites just bend over.
Gently fold sauce and whites together using a spatula.
Put in soufflé dish.
Reduce heat to 375°.
Bake 25 to 35 minutes.
