Boston Fish Chowder
Boston Fish Chowder is an moderately easy dinner. Made with 1 lb. haddock or cod fillets, 3 c. cold water, 2 slices bacon, 1 chopped onion and 3 medium potatoes, cut in 1/2-inch cubes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cover fish with cold water and bring to boiling.
Use water for fish stock.
Fry bacon until crisp; remove from pan.
Brown onion in hot bacon fat.
Cut potatoes into cubes and add to fried onions.
Strain fish stock into onions and potatoes and cook until potatoes are soft (10 minutes).
Flake cooked fish and add to potatoes.
Add milk, butter and seasonings and reheat.
Sprinkle parsley and dill and bacon bits on top before serving.
