Banana Bread
Banana Bread is an moderately easy dinner. Made with 1/3 c. shortening, 2/3 c. sugar, 3/4 tsp. grated lemon rind, 1 beaten egg and 2 to 3 ripe bananas, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mash 2 or 3 fully ripe bananas to make 1 cup banana pulp. Cream shortening, sugar, lemon rind and beaten egg. Sift flour with baking powder and soda. Add sifted ingredients in 3 parts to the sugar mixture alternately with the banana pulp.
Beat the batter after each addition until smooth. Place in greased bread pan, 4 x 8-inch. Bake at 350Β° for 1 hour. You may add 1/2 cup nuts or 1/2 cup raisins, soft dried prunes, apricots or dates, if desired.
