Soak and simmer beans.
Turn into a bean pot or heavy casserole without draining.
Combine salt, brown sugar, molasses and mustard with 1 cup boiling water and pour over beans.
Scrape rind of salt pork and cut gashes into fat 1/2-inch apart.
Press into the beans leaving only rind exposed.
Cover pot and bake in slow oven (250° to 275°) for 6 to 8 hours, adding more water as needed to keep beans moist.
Remove cover for last half hour of baking.
Makes about 12 servings.
