Angel Food Cake

Separate egg whites, let whites stand at room temperature about 1 hour.
Set oven at 375Β° to preheat.
Sift together 4 times, flour and 3/4 cup sugar.
In a large bowl, combine egg whites, salt, cream of tartar and flavorings.
Beat on speed No. 12 until whites are stiff and stand at peaks 2 minutes.
Do not overbeat until dry. Sprinkle in rapidly while beating on speed No. 8. Add the remaining 1 cup of sugar about 1 minute, scraping bowl gently toward beaters with rubber spatula.
Turn to speed No. 1; sprinkle in sifted flour mixture evenly and quickly, scraping up and over with folding motion only until blended, about 1 1/2 minutes.
