Turnip Soufflé
Turnip Soufflé is an moderately easy dinner. Made with 6 medium turnips, 2 tbsp. butter, 2 eggs, salt and pepper to taste and 1/2 c. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Steam turnips in a small amount of water until tender.
Drain and mash.
Add butter, cheese, milk and well-beaten egg yolks. Season to taste and mix thoroughly.
Fold in stiffly beaten egg whites.
Pile lightly into a well-oiled baking dish.
Bake in a 375° oven until inserted knife comes out clean (about 35 to 40 minutes).
