Turkey Stuffed Peppers
Turkey Stuffed Peppers is an moderately easy dinner. Made with 2 large green or red bell peppers, 1/2 c. chopped onions, 1/2 lb. lean ground turkey, 3/4 c. fresh or frozen corn and 3/4 c. cooked brown rice, this recipe delivers authentic, satisfying flavors. Cut peppers lengthwise to form oval boats; remove seeds.
Boil them for 5 minutes or microwave them.
Drain and rinse with cold water.
In 10-inch frypan, saute onions and garlic for 2 minutes. Add ground turkey, tomato paste and corn, stirring frequently; cook 5 minutes.
Add rice, Worcestershire sauce and pepper; cook 2 minutes on low heat.
Fill each pepper boat with 1/4 of cooked turkey mixture.
Sprinkle each with cheese and broil or microwave on High for 2 minutes.
Serves 4. Contains 189 calories each serving.
