Trout Almondine
Trout Almondine is an moderately easy dinner. Made with 4 trout fillets, 1/2 c. slivered almonds, 1 c. flour, 1/2 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Put fillets in shallow pan and add milk to cover.
Let stand for 1 hour.
Put almonds with peel in small bowl; cover with water.
Place in microwave on High for 1 minute.
This will make peeling come off easily.
Sliver the almonds with paring knife and set aside.
Remove fillets from milk and put in flour mixture (flour, salt and pepper).
Toss lightly and shake off excess. Brown fillets in oil until lightly brown on both sides.
Discard oil.
Put butter in skillet and add nuts.
Saute until golden brown.
Place fillets on platter and covered with toasted almonds. Serve.
