Sweet-Sour Greens
Sweet-Sour Greens is an moderately easy dinner. Made with 1/2 lb greens; turnip, mustard or collard, 2 slices bacon, 4 tsp all-purpose flour, 3/4 cup hot water and 1 tbsp sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Discard stems of greens and any damaged portions.
Thoroughly wash greens in cool water to remove dirt and sand particles.
Cut or tear leaves into small pieces.
In covered saucepan, cook greens in large amount of boiling salted water till tender, about 60 to 75 minutes.
Drain well and rinse.
In skillet, cook bacon until crisp.
Remove bacon, reserving drippings in skillet. Crumble bacon and set aside.
Blend flour into drippings.
Add hot water; cook and stir till thickened and bubbly.
Stir in sugar, cider vinegar, salt and pepper.
Stir in drained, cooked greens; heat thoroughly.
Garnish with crumbled bacon.
