Sweet Potato Carrot Gratin
Sweet Potato Carrot Gratin is an moderately easy dinner. Made with 4 c. sweet potatoes, peeled and cut into 1/2-inch cubes, 2 c. sliced carrots (i use pre-sliced carrots from the supermarket), 1/3 c. orange juice, 2 tbsp. brown sugar and 1/2 c. dried cranberries, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350Β°.
Put sweet potatoes and carrots in pot; cover with water.
Bring to boil and cook for ten minutes or until tender.
In large bowl, combine next four ingredients (juice to salt and pepper).
Drain sweet potato mixture; add to bowl and toss to coat.
Transfer to casserole dish coated with nonstick spray and bake for 20 minutes.
Sprinkle cheese on top and bake for ten minutes more.
