Sweet and Sour Pork
Sweet And Sour Pork is an impressive dinner you can prepare in about 2 hours 26 minutes. Made with (20 oz.) can unsweetened pineapple chunks (undrained), vegetable cooking spray, . lean boneless pork, cut into 1 inch cubes, c. chicken broth and c. vinegar, this recipe delivers authentic, satisfying flavors. Drain pineapple, reserve juices; set aside. Coat a large skillet with cooking spray, medium heat until hot.
Add pork, brown on all sides.
Remove pork, drain on paper towel. Wipe skillet with paper towel, return pork to skillet, stir in reserved pineapple juice, broth, vinegar, sugar, soy sauce and ginger. Bring to boil, cover, reduce heat, simmer 20 to 25 minutes or until pork is tender.
Add pineapple, green pepper and onion, cover and simmer 4 to 5 minutes or until vegetables are tender. Combine cornstarch and sherry, stir until blended, pour over pork mixture.
Cook, stirring constantly, until thickened and bubbly.
Serve over rice.
