Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 5 large zucchini, mozzarella cheese, grated, parmesan cheese, grated, 1 medium onion, chopped and 3 to 4 pods garlic, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Boil zucchini for 15 to 20 minutes until soft.
Dish out zucchini from skin.
Melt butter in a large skillet.
Mash zucchini with fork and drain. Saute onion in butter until soft. Mix in zucchini, salt and pepper to taste.
Sprinkle oregano to cover mix.
Add Parmesan cheese to taste (3 to 4 tablespoons). Add approximately 1/4 cup Mozzarella cheese and garlic to taste. Stuff shells by layering zucchini and Mozzarella cheese. Bake in a 350Β° oven until brown on top.
