Spiced Fruit Compote
Spiced Fruit Compote is an moderately easy dinner. Made with 2 (16 oz.) cans chunky mixed fruit in juice or lite syrup, 2 tbsps. brown sugar, 1 tbsp. cornstarch, 1/2 tsp. curry powder and 1/2 tsp. dry mustard, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Drain fruit, reserving all liquid in a saucepan.
Set fruit aside.
Mix brown sugar, cornstarch, curry powder and dry mustard with reserved liquid until well-blended.
Stir in prunes and apricots.
Cook over medium heat, stirring frequently, until mixture boils and thickens.
Add drained fruit.
Continue cooking, stirring occasionally, until mixture is just heated through.
Serve immediately; garnish with peanuts, if desired.
