Soor Ploom
Soor plooms are Scottish sour green boiled sweets with a hard glassy shell, bright plum-like tang, and sugar-dusted snap. Pack them in a paper cone for an old-fashioned treat.

Boil sugar, glucose, water, and cream of tartar to a hard-crack syrup.
Remove the pan from the heat and quickly stir in plum flavor, malic acid, and green coloring.
Pour the syrup onto an oiled slab and fold as it cools until it can be handled.
Roll into small balls, let them harden completely, and dust lightly with caster sugar.
