Ratatouille
Ratatouille is an moderately easy dinner. Made with 2 to 3 cloves garlic, minced, 2 to 3 onions, sliced or diced, 2 to 3 peppers, sliced or diced, 1 whole eggplant and 2 to 3 small zucchini, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Peel and cube zucchini and eggplant.
Place in salt water overnight.
Saute garlic, onions and peppers in a small amount of oil.
Add the rest of the ingredients and allow to simmer for an hour or two.
