Ratatouille
Ratatouille is an moderately easy dinner. Made with 1 onion, thinly sliced, 1/4 c. olive oil, 3 zucchini (1/8 inch slices), 4 medium tomatoes, peeled and chopped and 2 medium sweet red peppers, chopped (green peppers are okay), this recipe delivers authentic, satisfying flavors. Cook and stir onion slices in oil until tender.
Stir in remaining ingredients except parsley.
Reduce heat; cover and simmer 3 minutes.
Uncover and cook over medium heat, stirring constantly until liquid is evaporated.
