Cut up rabbit into serving size pieces.

Soak in a solution of 1/4 cup vinegar and 1 teaspoon salt and enough water to cover the rabbit for 3 hours.

Drain and dry.

Cover and allow to stand in the refrigerator overnight.

Mix 2 teaspoons salt and pepper, saffron and oregano.

Rub into the meat.

Fry rabbit slowly in 1-inch of bacon drippings until browned on all sides.

Place onion in a casserole followed by rabbit.

Pour 1 tablespoon vinegar in 1/2 cup water over the rabbit.

Cover tightly and bake at 275Β° for 2 hours.
