Quiche Lorraine
Quiche Lorraine is an moderately easy dinner. Made with 1 pie crust, 8 pieces cooked vegetarian bacon or 4 sausage patties, 4 eggs or the equivalent egg substitute, 1 1/2 c. heavy cream and 1 c. grated cheese (swiss or cheddar), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Flour both sides of pie crust, place in ungreased pie plate. Cook in 350° oven about 10 to 15 minutes, long enough so bottom of crust is slightly precooked.
This avoids a soggy crust.
Crumble bacon or sausage into small pieces.
Beat eggs, cream and salt. Stir in cheese and bacon/sausage.
Pour mixture into crust.
Bake 20 minutes in 450° oven.
Turn oven down to 350°, bake 30 more minutes.
Quiche is cooked when knife inserted in center comes out clean.
Let stand 10 minutes before serving.
