Potatoes Au Gratin is an moderately easy dinner. Made with 3 1/2 c. peeled, finely chopped potatoes, 1/2 c. low-fat cottage cheese, 1/2 c. nonfat buttermilk, 1 tbsp. chopped fresh or frozen chives and 2 tsp. cornstarch, this recipe delivers authentic, satisfying flavors. Cook potatoes in boiling water to cover, 8 minutes or until tender (do not overcook).
Drain and set aside.
Combine cottage cheese and buttermilk in container of an electric blender or food processor; process until smooth.
Transfer to a large bowl; stir in potatoes, chives and next 3 ingredients.
Spoon into a 1-quart casserole coated with cooking spray.
Bake at 350Β° for 20 minutes; sprinkle with cheese and paprika and bake an additional 5 minutes. Yield:
