Potato Puffs
Potato Puffs is an moderately easy dinner. Made with 3 medium-sized irish potatoes (old ones or idaho), 1/2 c. boiling water, 1/2 c. crisco or butter, 2/3 c. flour and 2 eggs, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cook potatoes in barely enough water to cover.
When done, put through a potato ricer.
Put water and shortening on stove.
Bring to rapid boil and add flour all at once, stirring rapidly until mixture leaves sides of pan and forms a mass or ball.
Add eggs, one at a time, beating after each.
Add salt, pepper, nutmeg and potatoes.
Drop by tablespoon in hot Crisco and cook until light brown.
