Portuguese Red Bean Soup
Portuguese Red Bean Soup is an moderately easy dinner. Made with 2 to 3 ham shanks (hocks), 2 linguica (portuguese sausage), 2 soup bones, 2 cans red beans or 2 c. dried red beans, soaked overnight and 2 tbsp. oil, this recipe delivers authentic, satisfying flavors. Boil the ham shanks, sausage and soup bone in enough water to cover.
When meat is almost done, add beans and cook until done. In a frypan, fry onion and parsley until tender. Add to soup stock.
Add potatoes and salt to taste.
Add other vegetables such as cabbage, carrots, etc.
