Pork and Mushroom Stew
Pork And Mushroom Stew is an impressive dinner. Made with 1 lb. boneless pork, cubed, 2 tsp. olive oil, 1 can chicken broth, 1/4 c. white cooking wine and 1 tsp. dried parsley, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a large saucepan, brown pork, half at a time, in olive oil. Return all meat to pan.
Stir in chicken broth, wine, parsley, thyme, garlic powder, pepper and bay leaf.
Simmer, covered, for 40 minutes.
Add frozen onions, carrots and mushrooms.
Simmer another 20 minutes or until vegetables are tender.
Remove bay leaf.
Combine cold water and cornstarch.
Add to stew with lemon juice.
Cook and stir until thickened and bubbly.
Makes approximately 4 servings.
