Pilau (Spiced Rice)
Pilau (Spiced Rice) is an moderately easy dinner. Made with 4 tbsp. corn oil, 4 tbsp. chopped onion, 2 c. raw busmati rice, well rinsed, 1/4 tsp. ground turmeric and 1/2 tsp. salt or to taste, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Heat the oil in a pan and, over moderate heat, fry the onion for 2 minutes, or until turns golden.
Add the rice and stir well. Add the turmeric and salt and continue to fry the rice lightly for 2 minutes.
Add water, cloves and bay leaves; stir.
Bring to a boil and immediately turn the heat to low.
Cover the pan and cook for 15 minutes.
Stir once toward the end of that time.
