Pickled Beets
Pickled Beets is an moderately easy dinner you can prepare in about 1 hour 54 minutes. Made with fresh beets, c. sugar, c. cider vinegar, c. water and whole cloves, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Make enough liquid from sugar, cider vinegar and water until all jars of beets have been filled to very top and sealed.
Wash beets.
Trim off tops and roots.
Place in large pot and cover with water.
Cover pot and bring water to boil.
Continue to cook beets until just fork-tender to center.
Pour off hot water and add cold to cover.
Change cold water until beets have cooled.
If beets overcook, pickles will be mushy!
Skin and slice cooked beets.
Loosely fill sterile jars.
Put 2 cloves in each jar. Boil together sugar, vinegar and water 5 minutes.
Fill each jar with liquid; seal and process on rack covered with boiling water for 5 minutes.
