Pfeffernuesse("Little Peppernuts") is an moderately easy dinner. Made with 1 c. dark karo syrup, 1 c. molasses, 1 c. granulated sugar, 1 c. butter or margarine and 1 tbsp. soda, dissolved in 1 tbsp. hot water, this recipe delivers authentic, satisfying flavors. Put the first four ingredients in a heavy saucepan and put on low heat until all ingredients are dissolved and sugar doesn't feel "grainy."
Remove from heat and add soda (dissolved in water), cinnamon, cloves and pepper. Stir in (or beat or pound) flour until dough becomes very stiff.
Divide dough and form into rolls, like sausages, about 1-inch in diameter.
Lay these on a flat pan, cover lightly with Saran Wrap to prevent drying, and chill until you find time to bake.
(Cookies have better flavor if chilled for a few days.)
To bake, cut into 1/2-inch slices and roll in cinnamon and sugar.
Bake at 325Β° for 10 to 15 minutes. These are dunkin' cookies, and are best with coffee or milk.
