Parmesan Baked Eggplant
Parmesan Baked Eggplant is an easy dinner. Made with 1 medium size eggplant, salt and pepper to taste, parmesan cheese to taste, 1 or 2 eggs, well beaten and about 3/4 c. dry bread crumbs (may use italian seasoned), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Slice unpeeled eggplant crosswise into 1/4-inch thick slices. Sprinkle with salt.
Dip each slice first into beaten egg and then into bread crumbs.
Spray baking sheet with nonstick spray.
Lay eggplant slices flat, not overlapping.
Sprinkle with salt, pepper and Parmesan.
Dot each slice with butter, if desired, but it really doesn't need it.
Bake at 450Β° for about 20 minutes or until browned.
