Heat oven to 400Β°.
Using a nonstick baking pan, brush the oil over the surface and set aside.
Place flour on wax paper.
Beat the egg white in a shallow bowl.
Combine cornmeal, salt and red pepper on second sheet of wax paper.
Dip the fish in flour; shake off excess.
Dip fish in egg white; shake excess.
Roll fish in cornmeal to coat and place on the baking pan.
Repeat with other fish.
Bake until bottoms of fish are browned and you can hear the fish sizzling.
Turn fish over and bake about 5 minutes more.
Serve with lemon wedges.
