Orange Roughy With Veggies is an moderately easy dinner. Made with 4 orange roughy fish fillets, 3 tbsp. olive oil, 2 small zucchini, thinly sliced, 1 medium onion, sliced and 1/4 lb. mushrooms, sliced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Heat oil in skillet; add onion, zucchini, mushrooms and basil. Saute for 4 minutes.
Sprinkle fish with salt and pepper and place fillets over vegetables in skillet.
Arrange tomato slices over the fish.
Cover the skillet and simmer 8 or 9 minutes or until the fish flakes with a fork.
Uncover the skillet and sprinkle the cheese over the top.
Cover again and cook until the cheese melts.
Serve immediately.
